It seems we can never get a break here in Georgia, the weather and seasons fluctuate daily but there's one thing, though, that will always stay the same. YUMMY SOUPS! Soups tend to be my go to meal when i need something that will LAST days for meal prep and keep me full. This one was so GREAT I don't even have a picture to show...we ate it all.
My mushroom ravioli soup is super easy to make and calls for ingredients you may already have in your fridge. Reference the slide show under the ingredients list for items that are not produced.
20 cups of water
2 packs 8oz mushroom tortellini
2 medium carrots sliced
4 celery stalks sliced
1 medium red onion chopped
1 green bell pepper chopped
2 corn on the cob chopped in thirds
1 can Rotel diced tomatoes
1 green chili diced
3 cups of dried lentils
2 red potatoes cubed
3 garlic cloves chopped fine
1 small pumpkin peeled & cubed
2 packs of Goya Sazon
2 tsp thyme
2 tsp black pepper
1 tsp hot sauce
1 tsp adobo
1 tbsp of vegan butter
2 bay leaves
*Add more water if necessary to ensure everything cooks correctly.
