Homemade Pineapple-Ginger Juice

Crisp, healthy, refreshing and SUPER easy to make! So before you throw away those pineapple skins, consider its many uses.

Pineapples are probably one of the most versatile fruits out there. As a part of my Jamaican culture, my family and others typically make a drink from the scraps of pineapples and ginger.

Pineapple and ginger is a powerhouse combo, packed with lots of antioxidants and vitamins! Here's my mom's classic recipe 🇯🇲:


Utensils
1 Large pot
Knife and cutting board
Large Strainer
Grater
Ingredients
1 regular sized pineapple (SUPER RIPE-almost brown all over)
1 ginger root
3/4 cup of light brown sugar
1 fresh lemon
~10 cups of water (ensure that there is enough water so that the pine skins and ginger can boil comfortably, too much water will reduce the taste of the beverage.)

Directions
Place a large pot of water on the burner to boil.
Peel your pineapple removing all of its skin, discarding its stem and root areas. Save its flesh for snacking.
Wash your pineapple skins and set to the side.
Grate the entire ginger root with its skin so it appears shredded... not too small, not too big.
Once the pot of water has come to a boil, add pineapple skins, ginger and light brown sugar. Stir.
Cut lemon in half and squeeze the juice into the pot (it's okay if the seeds get in the pot, we'll remove these later). Do not add the lemon itself, ONLY the juice. (the lemon rind will make it bitter)
Boil for 10-15 mins, on medium-high heat.
Take the pot off of the hot burner and cover with a lid, let steep on the stove overnight.

The next morning!
Grab your favorite mason jar or jug
Place the strainer over the opening
CAREFULLY pour the contents of the pot into the strainer so it fills the jar/jug
Chill and serve!

I personally prefer my drink gingery with no ice, but if you prefer less ginger and a sweeter beverage add more brown sugar and only 1/2 root of ginger.

Don't forget to compost the contents of your strainer, so new life can grow from the soil. 🌱💚
